it’s that time of year again when it’s all about Mum.  Some say it’s commercialised rubbish but I think it is nice that there is one day in the year when Mum gets that little bit of special treatment.  We are a fairly busy ole bunch so it’s nice to be appreciated every now and then!!!

A Nice Little Treat For Mum

Raspberry Tarts 

Rachel Allen’s Little Raspberry Cakes

Go the extra mile and bake some cakes for your Mum this Mother’s Day.  These cakes are the easiest thing to make and end up tasting exaclty like the tarts you buy in fancy cake shops.  They are lovely and really impressive so I would definitely recommend giving them a try for your lovely Mum this Mother’s Day


  • 175g butter
  • 175g icing sugar
  • 50g plain flour
  • 100g ground almonds
  • 2 eggs
  • 36-60 fresh raspberries (blueberries, strawberries or blackberries will work too)


Preheat the oven to 170 C / Gas 3.  Melt the butter and let it cool.  With a little of the melted butter, brush the insides of a muffin tin.  I find it easier to use paper cases and reduce the amount of butter needed in the recipe by 25g).  Sieve the icing sugar and flour together and add the ground almonds.  Beat the eggs with a fork and add to the mixture, stirring to combine.  Add the cooled melted butter and mix well.  Pour into the muffin tin and top each one with 3-5 raspberries.  Place the cakes in the oven and cook for 14-18 minutes until just firm in hte centre.  Wait for a few minutes to take them out of the tins.  Dust them with icing sugar.
